Dee's Mighty Muffins Recipe & Video

Dee's Mighty Muffins are Simple, Easy, Healthy & Delicious : )

DRY ingredients: *2 cups Oat Bran *2 1/8tsp Baking Powder, *1TBsp Cinnamon, *1/2tsp Nutmeg *1/2tsp Sea Salt
WET ingredients: *1 cup Vanilla Unsweetened Almond Milk *1/2 cup Unsweetened Applesauce *2 Large Egg Whites *1tsp Vanilla Extract *1/2tsp Liquid Stevia
THIRD SET ingredients: 1/2 cup each of the following: Walnuts, Raisins, Raw Agave/Honey

Grilled Watermelon & Apricots w/ Seared Tempeh

Yoghurt Potato Salad Recipe

I can never eat normal potato salad because Mayo hurts my stomach - so this is a godsend!

Kale (Chips!!!)

I turned these 2 Bunches of Kale into a Batch of Kale Chips!!!!

Dinosaur Kale works best, but here I think I used Lacinato (?).

*Wash off all the dirt. *Chop Kale into bite-sizes (they shrink in dehydrator!); I remove the Thick Stem and just use the LEAFY part *Squeeze juice of 1/2 Lemon over the Kale (in a Bowl). Add Sea Salt and grind it into kale leaves with your hands for 3-5 minutes - this softens it. *Add enough Olive Oil to coat the kale to moisten (Don't use more than 2oz!! - the afterproduct will be oily)

Pop those babies in the dehydrator @ 118degrees(F) for about 4 hours :)

Delicious!!! I ate these in just 2 days (it was a LOT of chips); my husband, family, and co-workers enjoyed tasting them too! :)
