In Black bowl on Left: I put leftover Tempeh & Red Bell pepper mix (from tacos last night) in bowl w/ 1 freshly cut up Tomato.

In Tupperware on Right: Salad I chopped up to eat over couple days.

Kale (Chips!!!)

I turned these 2 Bunches of Kale into a Batch of Kale Chips!!!!

Dinosaur Kale works best, but here I think I used Lacinato (?).

*Wash off all the dirt. *Chop Kale into bite-sizes (they shrink in dehydrator!); I remove the Thick Stem and just use the LEAFY part *Squeeze juice of 1/2 Lemon over the Kale (in a Bowl). Add Sea Salt and grind it into kale leaves with your hands for 3-5 minutes - this softens it. *Add enough Olive Oil to coat the kale to moisten (Don't use more than 2oz!! - the afterproduct will be oily)

Pop those babies in the dehydrator @ 118degrees(F) for about 4 hours :)

Delicious!!! I ate these in just 2 days (it was a LOT of chips); my husband, family, and co-workers enjoyed tasting them too! :)

Caesar Salad Dressing (VEGAN)

DELICIOUS alternative to cheesy fishy original (which I also am a fan of - I don't discriminate.. but I am picky when I can be)


Salad, delicious & basic - very Healthy

Organic:

Lettuce, green onions, cucumber, celery, carrots, F.S.A. (ground Flax Sunflower Almond; RAW- Not Roasted&Salted), 1/2 Lemon Juice per Serving, Bragg's Liquid Amino Acids, Bragg's Apple Cider Vinegar, drizzle of Extra Virgin Olive Oil.

One of The BEST things about this:
***it seems like a Caesar Salad dressing - at least in texture (from the nuts) and its SUPER HEALTHY & Vegan :) Nuts are a good substitution for cheese in a non-dairy diet.
