Quinoa Avocado Terrines

Bring Quinoa, 1/4 tsp chili powder and 1 cup water to a boil in small saucepan. Cover, reduce heat to medium-low and simmer 12-15 mins, or until most liquid is absorbed. Meanwhile, whisk together 2tsps Lime Juice, Oil and remaining 1/4 tsp chili powder in bowl. Add quinoa and toss to coat. Season with Salt & Pepper. Divide Quinoa among glasses. Recipe can be prepared ahead up to this point; Cover and refrigerate up to 24hrs. Dice Avocado, season w/ Salt/Pepper, and toss w/ Tabasco sauce + remaining 1tsp Lime juice. Divide avocado among glasses and top each with pinch of sprouts. Serve immediately with small forks or spoons.

Makes 8 servings.

Energy energy! high on health

Kombucha KOMBUCHA KOMBUCHA KOMBUCHA!!!!!!!!!!


Dude ~ it's like Hot Yoga all over again.

I get so in love with things that make me feel AMAZING.

Kombucha = makes me feel incredible.

Exercising = makes me feel incredible

Sweating in Sauna = makes me feel incredible (afterwards)

Yoga = makes me feel incredible

Waking Up Early = makes me feel Incredible

Gardening = makes me feel incredible

Dancing = makes me joyful



I think I annoy those around me (those close to me, like my husband and family) when I get *Super High Vibrations*  hahhaha because I am like a flittery fluttering butterfly

Also I guess having this conversation in the grocery store isnt appropriate as my hubby reminded e: "Rachel, people don't get high on life/health, they get high on drugs and thats all people are going to think when they hear you". well, hes probably right.

Its sad - because All people should know that it is entirely possible to feel high on life/health.

Yep yep.

Yeah, I guess I am still the person who runs out of breath talking. I have just always been so..... UP.

Chia Limeade

3TBsp Chia seeds into measuring cup & cover with 1cup Water

Pour Chilled Water into Glass Pitcher & Add fresh squeezed Juice from 2 Limes.

Sweeten with 12 drops of Liquid Stevia & Drizzle of Raw Agave (or 1/4 cup organic sugar).

Once chia seeds are all gelatinous & puffed up dump them into pitcher & mix.

serve chilled.

Kombucha Brew - Healthy Elixir

I started my very first Kombucha from a culture via the mail (see link) 25 days ago with Organic Black Green & White Teas and fed it Organic Cane Sugar.

I Drank so Much - I know people sip it - but I drank it like a beer - all 12 oz of it. its groovy, I've done some crazy detoxes before.

Couscous Pilaf

Vegan deliciousness.
My husband LOVED this so much our 8 servings disappeared in under 2days!!! :)


Title : Couscous Pilaf

Cook Time : 45
Yield : 8 servings

Ingredients
8oz ww Couscous, Garlic, Ginger, 2cups Broccoli/Zucchini, 4oz Corn/Peas, 1 Tomato, 3 Green Onions, 1/3cup Pine Nuts (OR slivered Almonds/Walnuts). OPTIONAL: 1/2cup Currants/Raisins, 1cup Carrots/BellPeppers. SPICES: Celtic Sea Salt, Turmeric, Coriander, Fenugreek Seeds, Cumin, Cloves, Red Pepper, Cinnamon, Black Pepper.

Directions
Mince fresh Garlic&Ginger. Slice 'n' Dice all veggies (if Frozen, thaw)

in Medium saucepan bring 2cups water Just to a Boil.

Add in 1TBsp EV Olive Oil.

Stir in Couscous & All other ingredients. & Bring to a Boil.

Once most liquid is absorbed,Remove from Heat.

Cover & let stand 5 minutes.

Fluff with a fork & Enjoy.

Mediterranean Morocco cuisine. Serve with your favourite Vegetarian entree, grilled Seafood, or Chicken Kabob.
